You can search gentoo for 'bindist' USE flag. Some examples are: ffmpeg+faac 
(hydra builds ffmpeg-faac), gsdjvu (not in nixpkgs).

BTW, I'm not sure that all packages depending on ffmpeg (compiled with --
enable-gpl in nixpkgs) have GPL-compatible licenses (though I'm not sure 
there are GPL-incompatible packages).
