Thanks for the hint. I got it working with the following config:

      fileSystems."/host_home" = {
        fsType = "vboxsf";
        device = "hostHome";
        options = "ro";  # If you want it read-only
        noCheck = true;  # fsck would be pointless.
      };

Additionally, I had to add the vbox guest additions into the scope:

      system.fsPackages = [
        config.boot.kernelPackages.virtualboxGuestAdditions
      ];
